I also want to say that I have never been a fan of deviled eggs, mainly because I am not a fan of mayonnaise. So, when I first caught wind of the idea of avocado instead of mayo, I was all in. Like most, I am a lover of anything avocado. Bring on the healthy fats! With these avocado deviled eggs, once you pop, you really can’t stop. Seriously, I could eat them all in one sitting.
Now, with all of the Keto chatter that I am always hearing, while I have never partaken in the diet, I did catch wind of the infamous “Fat Bombs”. When I heard this term for the first time, my honest reaction was “eww”. But, after doing some reading and learning that it is a high fat snack for those on the Keto diet. I understood.
What I love about these deviled eggs is that it is such a great combination of healthy fats and protein plus refreshing herbs, crunch of green onion, and the tang of fresh lime topped with a sprinkle of sea salt!
As a mom, it is vitally important to me to have healthy snacks that actually make me feel satiated and fueled to continue caring for my little busy body of a toddler boy.
The bonus! if you have a potluck or gathering to attend and are in need of an appetizer, I highly recommend making these. Always a hit!

- 6 hard boiled eggs halved, save the yolks
- 1 ripe avocado
- 1/2 fresh lime juiced
- 1/8 cup fresh cilantro chopped
- 1/4 cup green onion chopped white and green
- pink himalayan sea salt to taste
- black ground pepper to taste
- paprika topping

- Half the 6 hard boiled eggs and lay open on a serving platter or dish (place the yolks in a mixing bowl)
- In the same mixing bowl, add avocado, cilantro, green onion, lime juice, salt and pepper. Mash with a fork and mix together.
- With a spoon, scoop enough to fill the halved egg yolk hole
- Once all dozen have been filled, sprinkle with paprika for topping and another pinch of sea salt.
If making for a larger crowd, or you are like me and can eat all of them in a two days. I recommend doubling this recipe! Feel free to customize, add or replace any ingredients and make it your own.
