This meatball recipe is a mom life version inspired by my great Italian “Nani’s” reciepe. A recipe that I love to make on occasion. But, it does take time and prep, I recently had purchased some ground chicken on accident. I meant to pick up ground turkey, and when it arrived I wasn’t sure what I wanted to make. So, I pulled out my grandmother’s recipe and called a mom-ible, aka a mom-audible, and did a quick and easy version. Needless to say, they turned out delicious. This recipe is a must try!

Ingredients
- 2 lbs ground chicken organic
- 1 1/2 cups bread crumbs substitute: gluten free or panko
- 2 eggs lightly beaten
- 1 8 oz can tomato sauce
- 1 medium yellow onion finely chopped
- 1/2 anaheim or green bell pepper finely chopped
- 1 tbsp italian seasoning
- 3/4 cup Parmesan cheese
- 1/2 tsp black pepper
- 1 1/2 tsp salt
- 2 cloves garlic grated

Instructions
- In a mixing bowl, combine all ingredients and mix well with hands.
- Roll into golf ball size
- Lightly spray baking sheet with coconut oil (due to high heat). Bake 25-30 minutes.
- Remove and serve on top of pasta, roasted veggies or side of your choice
