This is a perfect, easy to make, crowd pleaser!
I have been making this dish for a few years now and it never dissapoints. As the years have gone on, I now add a bottom layer of chorizo, but this could easily be removed or replaced with a meat of your choice. If you are a lover of chorizo, then I highly recommend the addition.
While this dish does bake for an hour, it is quick to throw together and perfect for a crowd of 4-6 people.

Ingredients
- 2 bags frozen organic tater tots each bag is about 16oz
- 2 cups shredded cheddar cheese (or cheese of your choice)
- 2 cups whole milk (or milk of your choice)
- 3 large eggs or 4 small
- 5 strips bacon cooked and crumbled
- salt & pepper to taste
- 1 lb cooked chorizo (optional)

Instructions
- Preheat oven to 350 degrees. Take out a 9x13 pan.
- After browning/cooking the ground chorizo, drain the oil. Layer the bottom of your pan with the meat (this is optional)
- In a medium bowl, combine the tater tots and shredded cheese
- In a small bowl, whisk the eggs and milk until you see bubbles. I added a pinch of salt & pepper at this stage.
- Add in the tater tot/cheese mix on top of the chorizo bottom layer. Ok to use your hands to even out the tater tots.
- Pour the egg/milk mixture over the tater tots.
- Bake for 55-60 minutes, or until you see the eggs set (and they do not look wet or runny). At the 45 minute mark, open the oven, pull out the rack and sprinkle the pre-cooked/crumbled bacon. Place back in the oven for the remaining approximate 15 minutes.
- Once done, remove from the oven and let set for 5-10 minutes.
- Garnish with chopped green onion, chive, parsley, or garnish of your choice!
